Bergadano Barolo Sarmassa Riserva 2001 DOCG
Product in the vineyard Sarmassa, Barolo. This plot of ground produces a reduced quantity of brunches (about 6.000 kg/ha), however of exceptional quality and optimally suitable for the long aging of the wines. The vine is cultivated following the classic method "Guyot with short lopping. The grapes, after an accurate summery selection, are harvest per hand at the begin of October and carried in small chests to the winery where they are immediately pressed. The fermentation is traditional, with marc’s steeping, and lasts about 15 days in steel tanks with constant controlled temperature (26 – 28° C) and soft frequent remounted of the must. After the second spontaneous malic-lactic fermentation, the wine is ripened in Slavonian oak casks of 1800 litre. The wood maturation takes 24 months for 24 months, than there is a refinement for 12 months in steel tanks and six months laid in bottles.
Particularly suitable for a long aging, with time, this Barolo develops an ethereal bouquet which is both intense and harmonious. To be conserved in horizontal position, a fresh and dark place to approximately 12° C. is advisable.
To be decanted in a carafe at least one hour before being served to 18 - 20° C.
